My early years in coffee began in Colorado—a place rich with excellent roasters, generous mentors, and a strong culture of shared knowledge. It was an ideal environment to learn the craft, surrounded by people who were always willing to offer advice, insight, and encouragement.
Colorado is also known as a brewery hotspot, home to some of the most innovative breweries and immersive brewery tours in the country. One of my most memorable experiences came during a visit to Odell Brewing Company in Fort Collins. After taking their brewery tour, I was sitting in the main taproom when one of the brewers leaned out from the production area and asked, “You want to come see something cool?” He invited me into the brewing space, walked me up onto a platform, and let me watch as he poured hops directly into the tank.
That moment—being invited behind the scenes, close to the process—left a lasting impression. It was an experience I never could have had from a barstool or at home, and it fundamentally shaped how I think about craft, transparency, and connection.
That experience became a major inspiration for the space we’ve created at our Daysol Coffee flagship location in downtown Birmingham, Alabama. It feels especially fitting that we are located in a building that has housed breweries for over 15 years. Our goal is to offer that same sense of openness and discovery—to invite guests into the story of coffee.
Maybe you’ll visit while we’re roasting, or perhaps I’ll find you exploring our retail offerings, and I can show you something cool—just like that brewer did for me years ago. Coffee, like beer, is built on stories, passion, and hard-working people. It goes far beyond hot water and coffee in a cup.
My hope is that Daysol Coffee offers you an experience you’ll never forget.
